Pork Loin Hash

INGREDIENTS:
¾ lb. Alderfer Smoked Pork Loin
¼  cup Butter
3  Large Potatoes
Dash Pepper
1- 6 ½ oz. can Minced Clams
1  Large Egg, beaten
1 tsp. parsley
½  tsp. Salt
¼  tsp. Dry Mustard

DIRECTIONS:

  1. Cook potatoes in salted water until tender.
  2. Cool, peel and shred potatoes.
  3. Cut Alderfer Smoked Pork Loin Slices into small cubes.
  4. Drain the minced clams.  In large mixing bowl combine potatoes, pork loin, clams, egg, parsley, salt, pepper, and dry mustard.
  5. In a 10- inch skillet, melt butter and remove from heat.  Pat potato/clam/loin mixture into skillet leaving ½ inch space around edge.
  6. Cook over medium heat 8 minutes until brown.  Turn hash and brown 5 minutes longer.
