Cooking Instructions & Tips:
For optimum freshness, keep refrigerated and use by the date stamped on package.  Open packages should be consumed within 3 days, or frozen no longer than 60 days.  Thaw in refrigerator or microwave prior to cooking. Sausage is fully cooked when internal temperature is 160°F.  

Tip: To prevent the sausage from sticking on the grill or pan, gently coat the cooking surface with vegetable oil or a nonstick vegetable oil spray. 

GRILL OR SKILLET:

Whole Rope Sausage: Place rope sausage on the grill or in a stovetop skillet. Cook over medium high heat (350°F) for 20-25 minutes or until grillers reach an internal temperature of 160°F. Turn often with tongs to brown evenly.

Bite Size Pieces: Skillet: Cut sausage into ½” pieces and place sausage in skillet to cook over medium heat for 15 minutes or or until sausage pieces reach an internal temperature of 160°F.  Grill: place cut sausage pieces on alumunim foil and grill over medium heat (350°F) and cook 10-13 minutes or until pieces reach an internal temperature of 160°F. Turn often with tongs to brown evenly.

INGREDIENTS:
1 pound rope sausage, browned and sliced
4 cups milk
1 cup yellow corn meal
2 tablespoons butter
1/2 teaspoon salt
2 tablespoons onion, chopped
1 tablespoon mustard
1/2 cup Cheddar cheese, grated
4 eggs, well beaten)

DIRECTIONS:
  1. In large skillet, brown sausage on all sides. Remove to paper toweling to drain.
  2. In double boiler, heat milk. Gradually whisk in corn meal and cook, stirring often, until consistency of mush.
  3. Add butter and salt to corn meal mixture and mix well.
  4. In large mixing bowl, add onion, mustard and cheese to beaten eggs.
  5. Gradually stir corn meal mixture into eggs.
  6. Pour into a greased 1 1/2 - quart oven-proof baking dish. Top with sausage and bake at 425 degrees F. for 45 minutes.
  7. Cut into wedges to serves.
