Cooking Instructions:

  • Pan Fry: Place in unheated skillet and cook over medium heat to desired crispness. Drain on paper towel.
  • Broil: Preheat broiler. Place separated pieces on broiler rack. Broil 5 inches from heat source. Once bacon starts to brown, turn bacon over. Broil to desired crispness.
  • Microwave: Place pieces between paper towels on a microwaveable dish. Microwave on high power. 2 slices- 1 1/2 minutes, 4 slices - 2 1/2 - 3 minutes, to desired crispness.
Shrimp and Swiss Frittata

INGREDIENTS:
4 Slices of Leidy's Reduced Sodium Sliced Bacon
1 1/2 cups sliced mushrooms
2 tomatoes, chopped
1 pkg of chopped spinach, thawed
1/2 cup half and half
4 eggs
1 tablespoon minced fresh parsley
1 teaspoon seasoned salt
pepper to taste
1 cup shredded Swiss cheese
1 (6- oz) pkg. frozen salad
Shrimp, thawed, drained

DIRECTIONS:

  1. Preheat oven to 350 degrees.
  2. Fry the bacon in a 10 inch skillet until crisp.
  3. Drain, reserving 1 tablespoon for the pan drippings.
  4. Crumble the bacon.
  5. Saute the mushrooms, tomatoes and spinach in the reserved pan drippings until tender.
  6. Spoon into greased 9x9 inch baking dish.
  7. Beat the half and half, eggs, seasoned salt and pepper in a medium bowl untill blended.
  8. Stir in the bacon.
  9. Pour over the mushroom, tomato and spinach mixture and sprinkle with cheese.
  10. Bake for 20 minutes or until puffed and set in the center.
  11. Top with the shrimp and bake for 2 minutes longer.
  12. Let stand for 5 minutes before serving. 
  13. Sprinkle with parsley.
