Spanish Pizza with Grilled Chorizo Sausage
Ingredients
(1) 12oz. Package of Leidy’s Chorizo, diced
(1) Thin Pizza Crust Shell
3 Cups of medium length brown rice
1 cup of bell pepper, chopped
1 cup of red onion, chopped
3 cups of mild salsa
3 tsp. of olive oil
(1) Small Container of Sour Cream
1 bunch of green onions
(1) Thin Pizza Crust Shell

Methods/steps
Heat 1 tsp. of oil in a large frying pan over medium heat. Add Leidy’s Chorizo and fry until browned and set aside.
Boil rice, stir and drain.
Take pizza shell and spread 2 tsp. of olive oil around crust.Spoon salsa evenly on shell, coating the crust except for edges.
Spread drained rice over salsa.
Top with Chorizo, Onions and Pepper.
Bake at 350 degrees for 20 minutes or until the crust is lightly browned.Cut into narrow slices and top with sour cream and green onions.
